(two) Clean Eating Breakfasts

Hello ladies! I'm bringing you two 'clean' breakfasts today - both recipes are super delish, healthy, and (best of all) quick. I can whip up either of these in less than 10 minutes, which is way better than grabbing a granola bar (most of which are actually NOT healthy). I am a fan of both savory and sweet breakfasts, so I decided to post one of each. 


Mexican Egg & Rice Bowl 

Ingredients:
- 1/2 cup brown rice
- 2 Tbs salsa
- 5 egg whites (or 1/2 cup if you use prepackaged egg whites)
- pinch of salt 
- pepper to taste
- avocado 

Directions:
- prepare brown rice
- while rice is cooking, combine egg whites and salsa
- pour the mixture of egg/salsa into pan, mixing until cooked to liking
- serve eggs over rice, and top with avocado, then sprinkle with salt and pepper 



Protein Pancakes

Ingredients:
- 1 scoop whey protein powder (I use vanilla, purchased from Whole Foods)
- 2 egg whites
- 1/2 banana
- 1/4 cup oats (old fashioned kind)
- 1 tablespoon milk (of any kind)
- 1/8 teaspoon baking powder
- 1/2 teaspoon cinnamon 
- strawberries
- blue agave 

Directions:
- combine all ingredients in blender, and blend until smooth (do not over-blend)
- let mixture set for a few minutes
- spray pan with cooking oil (I use spray coconut oil) 
- pour mix into pan and cook for 2 minutes on each side (medium -high heat)
- flip cake when you see bubbles throughout entire cake (but be sure not to let it burn) ;) 
- top with strawberries and blue agave

up in the gym just working on my fitness


Time to get real, ladies...after having my sweet Sophia, I really fell off the fitness course I was used to. Breastfeeding really helped me lose all of the weight within a matter of weeks, and I was back to my pre-pregnancy weight in no time. However, there was a LOT of toning to do, and I had a plan....had being the keyword. It's amazing how you find yourself with NO time to do things for yourself (ok, maybe a bit dramatic, but a LOT less time than pre-babe), which includes working out.

Last month, I decided it was time to get with the program, as summer is coming up, and we are heading to Miami in April (woah, next month!). I decided my at-home workout plan was simply not working, got a gym membership, and began to schedule 4 days/week to go to the gym (so much more planning involved, yet again). Finally, I am getting into a routine (as of this week), and am getting back to it. Trying to schedule workouts around my husband's job, our nanny's schedule, and my own is a bit of a balancing act, but I'm finally getting it together.


I have given up Coca Cola for lent (just happened to be the right time), which has been surprisingly EASY - I'm so shocked. I owe it all to the glorious bev we call coconut water. Whenever I'm craving a soda, I reach for my coconut water (but still limit to 1 a day), and it has really been helping. My favorite brand is 'Real Coconut Water,' I think it has the best/most natural taste. I buy it at Whole Foods, but recently saw it on Amazon as well.


In addition to my gym schedule, I decided to kick it up a notch for the next 30 days, and complete Jillian Michael's 30 Day Shred. I know a lot of people do this program alone and see a lot of results, but 20 minutes/day doesn't seem like enough for me (I have a long way to go to get to my goal). Plus, the workouts aren't too difficult (yet - I'm only on day 2), so I don't feel too tired to hit the gym later in the day. I am passionate about fitness and nutrition, it's just getting the schedule consistent that has been causing the problem as of late. I'm hoping I've got it down now. Is anyone else ready to get in shape for summer? I hope I'm not the only one who needs a little kick! ;)

Simple Citrus Kale Salad

Happy Monday! I apologize for my absence - I was traveling the last half of last week and was too busy to sit down and write, but I'm back! Hope you had a great weekend; mine was pretty busy, but relaxing as well.

As you know, one of my new year's resolutions is to get back to eating clean - so far, so good. Over the weekend, I made a simple kale salad that turned out to be delicious, so I had to share it with you all today. This would be a great salad to have on-hand the entire week. Even if you don't think you like kale, you should give this a try...you might surprise yourself!

Ingredients: 
1 bunch kale
1 tbs freshly squeezed lime juice (I used the juice from 2 small limes)
1 orange, squeezed 
1 tbs olive oil
1 - 2 cloves of garlic, minced
2 tbs blue agave 
salt - I used about 1/4 tsp
pinch of cayenne pepper 
craisins/raisins/nuts/other veggies or fruit - whatever you prefer (I wanted to keep mine pretty simple, so I just used craisins) 

Directions:
Combine all ingredients in a bowl, and 'massage' them together for at least 2 minutes (this is very important for taste)
Place in fridge, and let marinate 30 minutes + before enjoying
